Some time ago, we fixed the remaining issues with Plasma Wayland in #332, but we somehow forgot to flip back on Plasma Wayland by default in EPEL 9 when we did that.

Let's get this switched back on ASAP.

This is effectively queued for the next Plasma 5.27 update to EPEL 9 now that it's in EPEL 9 Next.
